Most coffee carts pull espresso. Ours pours phin-brewed Vietnamese coffee from a nitro tap.
Every batch starts in the phin — the small metal filter that Vietnamese coffee has been made in for a hundred years. We brew it slowly at the shop the morning of your event, then serve it on site through a nitro tap system: cold, cascading, velvet-smooth. As far as we know, no other cart in the Bay Area pours phin-brewed coffee and hand-whisked matcha side by side on nitro.
The Phin, Then the Tap
Vietnamese beans, ground coarse, packed into the filter, and left to drip. No pressure, no rush. What comes out is bold, dark, and a little sweet. The phin is too slow to pour for a crowd cup-by-cup — so we batch-brew it properly, keg it, and charge it with nitrogen. At your event it pours like a stout: creamy head, cascading body, the same bold cup underneath.

What matcha do you use?
Ceremonial-grade matcha sourced directly from Japan, whisked by hand to order. No pre-batching and no artificial syrups in the base.
What is phin coffee?
Phin coffee is traditional Vietnamese drip coffee. Ground coffee sits in a small metal filter called a phin and drips slowly into the cup — no pressure, no machine. It produces a bold, concentrated cup, traditionally served over ice with condensed milk.
How far in advance should we book catering?
Reach out as early as you can, especially for weekend weddings in spring and summer. We'll tell you honestly if the date is open.
